Made using both the Traditional Method and the Ancestral Method, Franck Pascal and his wife Isabelle take care of 7 hectares of biodynamically cultivated vines; but to say that Franck simply works organically or biodynamically would stifle him; he is an endangered type of winegrower, connected to the cycles of nature and its energy.

NV, Fluence Brut Nature

From vines that are in biodynamic conversion - bringing life back to the soil to reveal the complexity of the terroir. In addition, the vine is supported by biodynamic preparations so that grapes with exceptional potential can be reborn. This Brut Nature has a gentle acidity that is perfectly balanced thanks to the minerality and tension in the grape, which gives an energetic freshness. This zero-dosage champagne is made using a delicate and ancient vinification process, known as the Ancestral Method. Choosing Fluence is a good introduction to the other cuvées in the range. Aged for four years on lees before disgorgement in 2019.

Dosage: Zero-dosage *no additional sugar has been added.

A blend of Chardonnay and Pinot Meunier from different vintages, each with its own identity. "Pacifiance" captures finesse and structure. It will take you on a long journey of flavours and emotions. A great choice for a special occasion.

NV, "Tolérance" Rosé 

Add a splash of colour to your table with this Rosé Champagne. A blend of "Reliance" and "Confiance", roughly 55% pinot meunier, 40% pinot noir and 5% chardonnay; the white and red grapes are expressed by creating a synergy of taste and texture. Made with the spirit of 'Tolerance' in mind, it refers to accepting each other's differences and personal expression. A great introduction to an evening as a couple.

"Bright onion skin colour. Heady aromas of ripe red fruits, Asian spices and fresh rose, with a bright mineral quality emerging with aeration. 2011,"Harmonie" Extra Brut

"Harmonie" is the meeting point between terroir champagnes and gastronomic champagnes. The harmony between grape variety and terroir gives way to the quintessence of the crumbly limestone terroir and the complantation of Pinot Meunier and Pinot Noir, each harvested in two instalments. First the Pinot Meunier, then a few days later the Pinot Noir. Each grape variety ferments on its native yeasts while the remaining sugars from alcoholic fermentation blend the two grape varieties to create a mineral and tannic framework.
