A blend of Chardonnay and Pinot Meunier from different vintages, each with its own identity. Delicate, ever-changing aromas of dried fruit and white flowers. Elegant and rich, with layers of flint and clay and a long finish and firm structure. Only 500 bottles made each year.

Story: Franck Pascal was one of the first biodynamic growers in Champagne and remains one of its most passionate and gifted winemakers. He meticulously cares for 7 hectares in the Vallée de La Marne with what he calls, “a deep sensitivity for nature and the energy forces in our vines.” Pacifiance is made using the solera method, using a constant blend of several vintages of his Quintessence cuvée. The name references peace, and Franck says it will take you on a peaceful journey of flavours and emotions.

Vinification: 45 year-old vines growing on chalk, clay, and limestone soils. Grapes are hand-harvested, gently pressed and placed in an enamelled vat for the first alcoholic fermentation. Each year Meunier and Pinot Noir are fermented separately then blended together after fermentation to create the Quintessence vintage cuvée. Franck keeps some of each vintage’s wine in a separate solera system, blending in each new year to create Pacifiance. Aged at least 5 years. Unfined, unfiltered, with zero dosage.
