VDF "Absteme S`Abstenir" (Red) 2018
A rare 100% Gamay from the Cahors region. Nose of juicy, crushed red berries with currants, cassis, smoke and sweet spice on the palate. Smooth light tannins and plenty of acidity make this a refined, easy to drink Gamay with lots of punch.
Story: Matthieu Cosse and Catherine Maisonneuve are leading a renaissance of the Cahors region. They share a vision of refined, elegant wines with a distinct personality. This wine comes from low-yielding 50 year-old Gamay vines growing on clay and limestone in the Plateau du Quercy, 23 km away from the Domaine. Mathieu says the wine has “lots of density of character and a strong identity! The Southwestern version of Gamay and it’s one of a kind!”
Vinification: Grapes are hand-harvested. The wine is naturally fermented with indigenous yeasts in a cement tank and then aged in old barrels. Unfined and Unfiltered.
Match it with: Chicken tagine with apricots and olives, Seafood Stew, Smoked Duck.
