"Paciencia" (Sparkling) 2020

Vinification: Còsmic Vinyaters “Paciència” Pet Nat 2020

Made from 100% White Carignan from 58-year-old vines in the Puig Rodó vineyard, Agullana, grown ecologically on granitic sand soils.

The grapes are hand harvested, destemmed, and undergo 2 days of skin-on maceration before being gently pressed. Fermentation starts spontaneously with native yeasts in stainless steel tank and finishes in glass bottle, following the ancestral / pét-nat method.

The wine is then bottle-aged on its lees for 55 months, disgorged, and aged under cork for a minimum of 12 months before release.

Technical details: 12% ABV, total SO2 under 10 mg/L.
