A truly unique wine… a 100% Chardonnay vinified in a solera system (similar to Sherry) that creates a gastronomic wine with a slightly oxidative style. A rich and textured wine with spicy and tobacco notes, sharp acidity and a salty finish. Reminiscent of a Jura style Chardonnay.

The Story: Maverick Muscadet producer Jérôme Bretaudeau of Domaine de Bellevue is devoted to the compelling terroir of Muscadet, but is known for forging his own path. Jérôme is a true lover of wine, and has set out to make the kinds of wines he likes to drink from all corners of the world. He wanted to create a sherry-style solera ageing system, and began with the 2014 vintage as the base. The system now includes seven years of wines, with each vintage blended into the other before every new release.  

Vinification: Grapes hand harvested and gently pressed. The wine is first fermented in egg-shaped clay amphora, then aged in a solera system using old oak barrels for 60 months. The base wine is from 2014, but the final wine is a blend that includes wines from each year between 2015 and 2021 (except 2017 when no wine was made).

Match it with: Excellent with hard cheeses, nuts, olives, or a white fish in a butter sauce.
