"When we started tasting this wine, it was unusual, it had so much character - very dynamic - it would have been a shame to put a label on it. There was no reason to come out of the appellation other than the fact that we wanted people to taste it blind." Isabelle Meyer the winemaker.
Match it with: A rustic aromatic pairing like a Tourte Alsacienne (if you can get hold of it) a tarte flambée would be delicious too.
Terroir: Old vines of Pinot Gris on Limestone. The grapes have been selected from parcels in the Grand Cru Hengst terroir.
Average age of vines: 40 years old
Vinification: A very short maceration before the press // fermentation takes place in inox // the juice is separated in two different barrels // one is aged on fine lees while the other undergoes MLF (malolactic fermentation) // followed by further ageing on lees // both barrels are blended together before the bottling.
