Description
Terroir: Old vines of Pinot Gris on Limestone. Grapes have been selected on different parcels from Grand Cru Hengst terroir.
Average age of vines: 40 years old
Vinification: Very short maceration before the press. In a first time, the fermentation takes place in inox. The juice is then separated in two different barrels: the first one aged on fine lees. A malolactic fermentation happens in the second barrel, ageing on lees as well. The two barrels are blended together before the bottling.
