Description
The Producers, Thomas and Charlotte Carsin, are avid sailors and their love of the sea often influences their winemaking and naming, in this case, La Boussole means compass.
Vinification: Grapes are hand harvested and pressed directly. After 2 days of cold settling the juice is racked into stainless steel tanks where spontaneous fermentation begins. The wine is left to mature for a short time in stainless steel with the fine lees prior to bottling.
