Vinification: Grapes are hand harvested and taken directly to the cellar. Whole bunch fermentation with indigenous yeast lasts for around 15 days. After this the grapes are pressed and transferred into old oak barrels to complete fermentation. The finished wine is left to settle for a short time before bottling.
