Ormiale's cellar is hidden away in a historic quarry located right in the heart of St. Emilion. All the wines produced by Fabrice Domercq are done so with meticulous attention to detail with all the work carried out by hand. His cellar houses a combination of fibreglass and concrete tanks as well as french oak vats and demijohns.Yields are typically, around 20-25 hectolitres/hectare. In comparison, the maximum authorised yield for Bordeaux Supérieur in 2009 was 59 hl./ha! If you think you know your Bordeaux wines Ormiale may prove you wrong!

Vinification: Grapes are harvested and destermmed by hand. Fermentation gets underway using only indigenous yeast in fibreglass tanks and large oak vats. Wine is left to mature for 12months in a combination of old oak barrels and glass demijohns before blending.
