Vines: Xarel-lo

Vinification: The grapes for this wine are harvested early to retain as much freshness as possible. The berries are crushed, and the juice spends 5 days fermenting in contact with the skins to extract further flavour. The wine is left to mature I stainless steel before being bottled.

Match it with: With both structure and minerality on its side this wine is an ideal companion to most foods. Although you would never go wrong with roasted pork or hard cheeses!
