Terroir: South exposed parcel on a lieu-dit called "Les Corvées". Gravel soils above shallow early Jurassic gray marls.

Age of Vines: 20-30 years

Vinification: Grapes are hand harvested in small baskets. Grapes are sorted by hand and destemmed before undergoing a very light press. Maceration of 10 to 30 days depending of the year. "Pigeage" (stomping) once a day, pumped over the first 3 days of maceration in open cylindrical vessels, followed by spraying over the cap. Malolactic fermentation in vats before ageing in "Foudre" (large wooden vat) for 12 months. No fining, no filtration and no sulphites added.
