After a brief stint as a chemistry student, Valérie soon realised that the nearby oenology campus looked much more appealing. Today Valérie makes wine under her own labels, which are a playful reference to her convivial and rebellious nature. In the words of Valérie herself:
“I make wines to enjoy - it’s about conviviality and simplicity. You don’t need to be a wine connoisseur - the main thing is to take pleasure and enjoy!”
Terroir: Limestone & Clay
Age of vines: 40 years old
Vines: Syrah, Carignan
Vinification: Vines are harvested by hand, and the grapes are gently crushed. Fermentation takes place with the juice in in contact with the skins in small concrete tanks using indigenous yeast. A combination of punching down and pumping followed by racking after 9-21 days. The wine is left to mature for a short time prior to bottling.
