Sour english sweets & aromatic freshness...

The plot from which these grapes come from is at Porte du Parc. In making this bottle Céline and Benoit want to keep the aromatic freshness of the Gamay with its aromas of sour English sweets that characterise it. The grapes are harvested in the cool mornings to avoid any oxidation of the fruit. The whole grapes are then delicately placed in the press for direct pressing. The juices are expressed spontaneously and naturally during alcoholic fermentation at low temperature.
