This wine is made from the same base as the Sec Domaine, but is vinified entirely without sulfites, creating a totally different style of Jurançon. Notes of ripe apple cider and hay, with a hint of oxidation. A totally unique, must-try wine.

Story: For more than thirty-five years Domaine de Souch has been a leader in a modern style of Jurançon wines. Organic and Biodynamic since 1994, the southern-facing terraced vineyards are carved into steep slopes facing the Pyrenees Mountains. This cuvée was created by longtime cellarmaster Manu, who wanted an expression of Manseng grapes without sulfites. The result is a surprisingly different texture, weight and flavour.

Vinification: 40 year-old Manseng vines growing on clay and limestone soils. The vineyard is located on a upper reaches of a hilly valley side with south exposure facing Pyrenees Mountains and Pic du Midi d’Ossau. Grapes are hand harvested and sorted several times, then gently pressed. The wine is vinified in in thermo-regulated stainless steel tanks to preserve freshness. Short ferment and aged in barrel for more oxidative aromas.

Match it with: Strong cheese, smoked fish, cured meats.
