This late harvest Jurançon moelleux is 100% Petit Manseng, and beaming with fresh aromas of exotic fruits balanced with a beautiful acidity, each layer revealing something new. Rich body and a long finish. The 2021 grapes were quite mature, giving more tropical notes like mango, and an overall sweeter feel and fuller body with still loads of freshness. 80-85 grams of residual sugar.
Story: For more than thirty-five years Domaine de Souch has been a leader in a modern style of Jurançon wines. Organic and Biodynamic since 1994, the southern-facing terraced vineyards are carved into steep slopes facing the Pyrenees Mountains. The domaine’s sweet wines are a benchmark for the region and are served in fine restaurants worldwide.
Vinification: 35 year-old Petit Manseng vines growing on clay and limestone terraces which have less aromatics and more freshness. Grapes are hand-harvested around late October or early November, when they are very ripe, but have not yet begun to dry (passerillage). This keeps the freshness, and lively aromas of exotic fruits. The wine is vinified entirely in stainless steel tank. Best enjoyed at 12°C to 14°C.
Match it with: Blue cheeses, or creamy cheeses like Saint-Nectaire, veal blanquette, or
caramelised fruit desserts.
