The balance of this wine with two weeks of skin contact is nothing but mouth-watering. With notes of stone fruits and spices and a fresh minerality to finish.
In the far east of Venezia-Giulia you will find the low yielding chardonnay vines of Radikon. Grape selection and precision are carefully guarded here, and only the best berries are selected for vinification. Meaning, that it isn’t uncommon for an entire vine to go into one bottle.
Vines: Chardonnay
Vinification: Grapes are hand-harvested and crushed. The juice is left to macerate with their skin for 8/14 days in oak vats. The wine is then matured for 18 months in 25/35hl casks before being bottled and aged for 2 months before being released.
Match it with: this wine pairs well with pork chop, apricots, almonds and a white bean sauce…
