Radikon’s game-changing blend of 80% low-yield Chardonnay and 20% Friulano. Two weeks of skin contact result in a mouth-watering wine with notes of stone fruits and baking spices, with a touch of paprika. Full body, smooth tannins and lots of fresh minerality on the finish. Serve at 55°C - cellar temperature.

Story: In a tiny village in the far northeast corner of Italy, Saša Radikon produces arguably the finest skin-contact wines in the world. In the ponca soils of Venezia-Giulia, Saša grows Chardonnay at very low yields. Only the best berries are selected, so it is not uncommon for an entire vine to make up just one bottle. The percentage of each variety in this wine changes with each vintage, but will always be Chardonnay dominant. The wine is Saša’s take on what a “traditional” grape like Chardonnay can become in his expert hands.

Vinification: Grapes are carefully chosen, hand-harvested and gently crushed. The juice is left to macerate on the skins for 8 days in oak vats. The grapes are then co-fermented in oak with indigenous yeasts, and no additions of Sulphur. The wine is aged for 12 months in large 25/35hl oak casks, then spends a few months on stainless steel to come together. Then it is bottled and aged for a further 2 months before release. Beginning in 2009, for his Slatnik & Sivi cuvées, Saša wanted to release wines which are meant to drink now, not age. So he started to make a standard 75ml bottle, as opposed to his usual 100ml bottles.
