This is a macerated Xinomavro rosé that challenges those who think rosé is always simple. Slightly hazy deep salmon colour with an explosion of juicy red fruit, orange peel and dried herbs. Plus Ximomavro’s characteristic tomato notes and tons of texture. It’s a juicy, funky and delicious rosé that only Ligas could make.

The Story: Ktima Ligas was founded in 1985 in Thessaloniki, Greece by Thomas Ligas, with a quest to revive both the traditional varieties and traditional agriculture of the Pella region through respect and cooperation with nature. Today the domaine is run by his daughter Meli, who continues the focus on permaculture and local grapes, and adapts her cuvées to each vintage, parcel and variety.

Vinification: From 25 year- old Xinomavro grapes growing on clay and chalk soils. Grapes are hand-harvested in the morning, placed into a stainless-steel tank for a few hours of bleeding on the skins, then put into a cold tank at night. Aged in old barrels for few months, then bottled unfined and unfiltered.

Match it with: Strawberry and mint salad, grilled octopus with pomegranate, grilled pork with herbs, strawberry tart with cream.
