This is a pét nat sparkling wine made in collaboration with Salva Batlle and David Baixas.
A blend of 25% Parellada, 50% Macabeo, 25% Xarello grown organically in the "Mas Regany" vineyard in Aiguamúrcia (Tarragona) on clay-limestone soils at 470m of elevation. Harvested by hand, cold maceration for 2 days, fermentation in a stainless-steel tank and bottled under crown cap without disgorging. Unfined, unfiltered, and zero SO2. Refreshing foamy bubbles, clean, almost faintly aromatic and soft mineral tones.
