Description
Terroir: The parcel is located in the municipality of Chichée, Fleys and Béru, 400 meters above sea level. On a plateau at the top of a hill composed of "Serres" (extremely draining limestone geological formation). Lime and clay soil, with a base of lime mother rock under a very hard lime layered crust.
Average age of vines: Vine plot planted in the 80's/90’s
Vinification: Handpicked grapes in 12 kg crates // Whole bunch long gentle press cycle // Runoff and alcoholic fermentation in oak // Fermentation with Indigenous yeasts // 12 months ageing in oak barrels and 6 months in tank on fine lees // No filtration, no finning.
