Average age of vines: 70 years old or more
Vinification: Grapes are hand-harvested, and then destemmed. Starts with a carbonic fermentation for 4/5 days, then the juice and the skin stay in contact for 4/5 weeks, few punch down, gently infusion to extract tannins. When they press, the first juice goes to in barrel to make the cuvee "7 souris". The "Jus de presse" (juice that is extracted by pressing the grapes) goes in the cuvee "Peyrouzelles".
