Bursts of apricot and blossom, along with Mediterranean herbs shine through on the nose. This carries across on the palate, accompanied by fresh minerality to finish.
Brunnhilde Claux’s main aim has been to work the vineyards of Domaine de Courbissac in order to achieve ripeness with the lowest possible sugar levels. This enables her to capture as much freshness as possible in her wines. The vines for this cuvée, although rather uncommon to find in other vineyards in Minervois, thrive on the clay and limestone soils.
Vines: Listán, Terret Gris
Vinification: Vines are hand harvested and vinification takes place with minimal intervention using only indigenous yeast. The wine is left to mature in concrete vats for 6 months before being bottled.
