Les Terre Blanches have half an acre of Chardonnay. This cuvée is the result of exploring new aromatic complexities without losing the tension and finesse of Chardonnay. At the harvest, a few cases of harvested grapes are delicately placed in the press. The juices are drained by gravity into the barrels without settling or pumping.
The entire fermentation and ageing phase takes place without topping up. At the end of Alcoholic Fermentation, a yeast “skin” forms to protect the wine from the air. It is then aged for 18 months under veil.
