Winemaker: "Maccabeu is a Catalonian grape and very comfortable in this region."

Match it with Celeriac remoulade and lemon-thyme grilled chicken thighs or pork medallions…

Terroir: Sand, limestone and clay and lots of pebbles in the soil.

Ages of the vines: 30 - 40 years old

Vinification: Grapes are hand-harvested // gently and directly pressed // whole-bunch //  aged in old oak 2,000-litre foudre for 10 to 14 months // no fining // no filtration.
