The brand "Athénaïs" has been launched to create a range of wines produced in beautiful appellations in the north of Burgundy, Yonne, and gave birth in 2010, to a selection of wines.

Terroir: Schist soil

Average age of vines: 40 years old

Vinification: Grapes are hand harvested. Full bunch natural fermentation (with indigenous yeasts) in Amphora. Ageing for 12 months in old oak barrels. No filtration, no fining. Max 2g/L of sulphites added at the bottling.
