Vinification: Grapes are hand harvested // de-stemmed by hand before undergoing a very light press // full carbonic maceration // native yeast only // the juice undergoes malolactic fermentation in temperature controlled stainless steel tanks before it is transferred to old oak foudre barrels where it rests for 3-4 months // bottling the following spring without filtration or sulfites.
