Description
A blend of Trousseau, Petit Béclan, an old indigenous grape variety and Syrah from limestone soils. A semi-carbonic wine with no sulfur added from harvest to bottling.

Age of the vines: 11 years old (planted in 2008)
Vinification: Grapes are hand harvested and de-stemmed // natural fermentation with indigenous yeast in stainless steel vats // second stage of fermentation takes place in old oak barrels // malolactic fermentation in barrels the following spring // topping every 10 days without So2 // ageing for 6-12 months // no sulphites added // no filtration and no fining.
