Intense garnet with a purple hue. Ripe fruit notes of cassis and blackberries. The palate is deep and concentrated. Juicy fruit character, hints of sea-salt and fine silky tannins with a persistent finish!
Jean-Charles took over the estate in 2000 from his father Antoine Abbatucci, and thanks to him 18 native Corsican varieties have been preserved. In this blend Jean-Charles works with 7 of them, grown across 18 hectares of vines on granite soils situated 100 meters above sea level. Since 2016 the vineyards for this cuvée have been cared for using seawater.
Vinification: Grapes are harvested by hand and destemmed but not crushed. Maceration lasts for several weeks in stainless steel vats with a mix of punch down and pumping over. Once fermentation completed the wines is aged in a combination of Foudres and 600L barrels for 12 months. Blending takes place in stainless steel, before a further period of 3 months maturation prior to bottling.
Match it with: Although surprising, it is ideal to enjoy with Gillardeau oysters which will reinforce this sea-salted aspect of this wine!
