Terroir: Clay & limestone
Average age of vines: the Merlot vines are from 3 different parcels and the vines are aged between 15 and 70 years old. The Cabernet Franc vines are 40 years old.
Vinification: Grapes are hand harvested and destemmed. Natural fermentation (with indigenous yeast) in big open barrel and stainless steel tank for 4 to 5 weeks. Ageing in an old oak barrel of 500L, 600L, 225L and stainless steel tank. No filtration, no fining.
