Spicy & full-bodied...

Gamay de Bouze is a "semi-teinturier" variety so it has slightly pink juice and very dark skin. The “La Vacherie” parcel is made up of clay and silica with some russet and ferrous sandstone. The grapes are harvested very ripe. Then vat 50% of the harvest in whole bunches, and de-stem the remaining 50% in foudres. Semi-carbonic maceration // One-year ageing in foudres with regular toppings.
