Description
Terroir: Granitic and sandy soil. Blend of different parcels, one located close to the sea, another one a bit more inland, and a third one on the hills. All of them are in the Salnes Valley.
Age of the vines: between 30 to 90 years old
Vinification: Harvested by hand. Each parcel is vinified separately and blend together after. Grapes are destemmed and pressed directly. 20% of the juice is put in foudre and 80% in stainless steel tanks. Natural fermentation lasts for 20 days. No malolactic fermentation. Wine is bottled in April.
