Age of the vines: 200 years old vines
Vinification: Harvested by hand // whole Cluster pressing, and after a couple of hours of maceration the wine goes straight into barrels // racked once to separate the rough lees, and then it goes back into the barrels // ageing for 11 months until the following September when the wine was bottled // no sulfur added during the whole vinification, no temperature control // very low levels of sulfur added at bottling.
