This Pecorino from Emidio Pepe is the result of a much colder and rainier season, which brings what a lot of people call "the Pepe cold vintage white" with the backbone, saltiness and richness that the variety always brings.
Pecorino is an indigenous grape variety from the south of Marche and north of Abruzzo. Used to be grown in high altitudes, Pecorino is mellow and generous.
Terroir: Clay for 1.5m deep and then, limestone underneath. North facing vineyard.
Age of vines: Vineyard planted in 2006. First harvest in 2010.
Vinification: Grapes are hand-harvested // crushed by feet // spontaneous fermentation // ageing in concrete tank // sulphur < 60ml/L.
