A 100% Kydonitsa wine that is aged in large old oak barrels for up to one year. Deep lemon colour, aromas of candied lemon peel, quince, stewed peach and a hint of baked sourdough. A saline touch on the finish. A concentrated, complex wine that surprises with it’s presence.

This is one of the domaine’s Barrique trio. Thomas and Meli were doing experiments of fermenting a few different wines in barrels. When Thomas tasted the three whites, he began comparing the characters of the wines to famous women in Greek culture and the concept was born. On this label is the great lady of the theatre, Katina Paxinou. The introverted, great actress transforms on stage in a similar way to the shy Kydοnitsa grape– which, in the right hands, can do astonishing things. The wine is subtle and shy, like Katina, but also capable of greatness.

Vinification: 17 year-old Kydonitsa vines, clay and limestone soils, hand-harvested, gently pressed to avoid extraction of colour, macerated on the skins for one week. Fermented in barrel for 6 months on the lees, no battonage, aged 6-12 months in old Austrian oak barrels. Unfined and unfiltered, no added sulphites.
