Notes of baked apple and almond, with a hint of dried fruit.  There is a touch of residual sugar that is well balanced by the lingering freshness and minerality.

This cuvée takes its name from the top temperature, recorded on June 28th, 2019, during a vintage that was heavily challenged by drought. The vines are situated on the limestone slopes and were grown with no synthetic treatments. Instead, Ludovic opts for natural herbal remedies and essential oils to maintain the health of his vines.

Vines: Grenache Blanc

Vinification:  Berries are pressed directly, and vinification takes place in stainless steel tanks using only indigenous yeasts. The wine is left to mature for 12months in the same tanks before being bottled.

Match it with: Mature cheese or lightly spiced dishes!
