The flagship wine of the domaine, Tradition is a blend of Carignan, Grenache and Cinsault. Notes of confit cherry and violet from the Cinsault, plus laurel and thyme from the Grenache. The Carignan adds a variety of spices and deep colour– creating a supple but luscious wine. Wild herbs, ripe strawberry, black fruits and cassis. A powerful, rustic wine with incredibly fresh, pure fruit balanced with ripe tannins and a long finish.
Story: Didier Barral has elevated biodynamic farming in the Languedoc, creating an entire self-sustaining, biodiverse ecosystem. His 25 hectares of vines are intermingled with a menagerie of insects, animals and other crops all raised with full respect for the terroir. The three grapes for this cuvée all come from 40-70 year-old vines growing in schist-rich soils between the Pyrenees Mountains and a garrique forest. Didier considers this wine the ultimate expression of the traditional grapes of the region when grown and vinified with respect and dedication.
Vinification: Grapes are hand-harvested and gently pressed and undergo fermentation with indigenous yeasts. Each variety is vinified separately. Grapes are macerated for 3-4 weeks in cement tanks with regular manual punch-downs. After maceration, the must is lightly pressed with an old wood vertical basket press and then aged for 24 months a mix of cement and stainless steel. It is bottled unfined and unfiltered.
