Age of vines: 25 years old vines for Orbois & 50 years old vines of Sauvignon.

Vinification: Grapes are hand-picked. Wine is aged in oak barrels for 10 months on lees. Then the wine is racked in cement tank to remove the dead yeast, and both grape varieties are blended. After 2 months, the wine is bottled. Bottling with light filtration, no fining.
