Terroir: The vineyard is located 300m above the sea level and around the castle. The vine plot is surrounded by a wall dating from the 12th century. The soil is made up of Kimmeridgian bed rock plunging under an island of clay on the surface. 

Average age of vines: 35 to 40 years old

Vinification: Grapes are hand harvested // Whole bunch long gentle press cycle // Natural fermentation with indigenous yeasts // Light cold gross lees racking // Vatting and alcoholic fermentation in oak // The wine is aged 12 months in 350L oak barrels and 6months in tank on fine lees // No filtration, no fining. S02 total about 30 mg.
