Terroir: "Hill of priests", is the highest hill in Béru. The soil is made up of small limestone scree eroded by the wind and rain that affect this exposed Vine plot. 300m Altitude. Orientation  East-West facing dome. 

Average age of vines: 35 to 40 years old

Vinification: Grapes are hand-harvested // Whole bunch long gentle press cycle // Natural fermentation with indigenous yeasts // 100% malolactic fermentation // Light cold gross lees racking // Vatting and alcoholic fermentation in oak // Aged for 12 months in old oak barrels and 1 year in a stainless steel tank // No filtration, no fining // No sulphites added.
