Dry, delicate red fruit notes, vibrant acidity and a Champagne like finish! 

Ormiale's cellar is hidden away in a historic quarry located right in the heart of St. Emilion. All the wines produced by Fabrice Domercq are done so with meticulous attention to detail with all the work carried out by hand. His cellar houses a combination of fibreglass and concrete tanks as well as french oak vats and demijohns.Yields are typically, around 20-25 hectolitres/hectare. In comparison, the maximum authorised yield for Bordeaux Supérieur in 2009 was 59 hl./ha! If you think you know your Bordeaux wines Ormiale may prove you wrong!

Vinification: Produced following the "Ancestral" method. Biodynamically farmed grapes are harvested by hand and pressed directly. Fermentation begins with only indigenous yeast, part way thorough the wine is bottled and fermentation completes. After 14month ageing on lees the wine is disgorged.
