Terroir: Clay and limestone. The vines are planted in Quercy, just outside Cahors.

Average age of vines: 47 years old.

Vinification: Grapes are hand-harvested. Natural fermentation with indigenous yeasts in cement tank, and then ageing in old barrels. No filtration, no fining.
