Terroir: Grapes come from two plots. A plot of old vines (50 years old) located in the Herrenweg of Wintzenheim, on gravel soil. The other plot comes from the Rotenberg (North face of the Grand Cru Hengst) with marl and limestone soil.
Vinification: Harvested by hand //Pressed whole pneumatically //Spontaneous fermentation without added enzymes, yeasts or chapitalisation //Fermentation from one to four months // Aged in century old oak tuns until bottling.
