Terroir: Granitic soil. 

Age of the vines: 200 years old vines

Vinification: Harvested by hand. Whole Cluster pressing, and after a couple of hours of maceration the wine goes straight into barrels. When the alcoholic fermentation is done (it took 4 weeks in 2017), the wine is racked once to separate the rough lees, and then it goes back into the barrels. It's aged for 11 months until the following September when the wine was bottled. No sulfur added during the whole vinification, no temperature control. 

Low level of sulfur added at bottling.
