Description
Terroir: Granitic soil.
Age of the vines: 200 years old vines
Vinification: Harvested by hand // Whole Cluster pressing, and after a couple of hours of maceration the wine goes straight into barrels // When the alcoholic fermentation is done (it took 4 weeks in 2017) // The wine is racked once to separate the rough lees, and then it goes back into the barrels // Ageing for 11 months until the following September when the wine was bottled // No sulfur added during the whole vinification, no temperature control // Low level of sulfur added at bottling.
