Description
Terroir: "Ponca" are layers and blends of minerals from the prehistoric sea bed, clay and sandstone.
Vinification: Grapes are hand-harvested, destemmed and then transferred to oak barrels for a 2-week maceration. There is no temperature control nor chemical yeasts.
Grape skins must be always covered with wine: that’s why during all the fermentation the cap is punched down manually 2 – 3 times per day. Ageing in old oak barrels for about 18 months. Bottling by the end of January 2019. Bottle ageing before selling for at least 2 months.
The RS wines are a blend of 75% Merlot and 25% Pignolo, a local grape variety.
