A 100% Pinot Noir with a pale colour and light, racy aromas of red fruit and spices. Just a touch of floral on the finish. A refreshing, easy to drink red that is light on tannins. Really versatile and a great warmer-weather red.

Emmanuel Giboulot comes from a long legacy of organic viticulture, and remains one of its greatest advocates in Burgundy today. He has four decades of experience in crafting the finest quality wines from a variety of terroir. This vineyard is located in the valleys to the east of Beaune, in the village of Combertault. The area is known for a lighter style of Pinot Noir, to which Emmanuel brings another dimension with his thoughtful winemaking.

Vinification: Pinot Noir vines grown on clay and limestone soils. Grapes are hand-harvested and are gently pressed using a manual press, then cold-settled for 24 hours. No sulphites or yeasts added. The juice is fermented in traditional oak casks and aged for 18 months in only old oak barrels.

Match it with: Chicken with cream sauce, veal or fois gras.
