Age of the vines: 15 years old
Vinification: grapes are handpicked, sorted and destemmed. Gravity racking. traditional vinification in concrete vats. The fermentation takes place for 28 to 30 days with "pigeage" (punching of the cap) with low pressure. Ageing on fine lees for 8 months in concrete vats. Light filtration. No fining.
