"Carrying, like a banner, the Danjou signature florals. Rose hips, rose petals, peonies. The smell of a flower garden the morning after a storm. Red-plum skins and a very, very subtle touch of mushroom. Arched, insistent tannins that press into your skin like the coolness of a pianist’s slender hand; long, strong fingers drumming precise, silent, life-beats into the palm of your hand. Grenache sings alto, spoons cinnamon-spiced strawberries into your mouth, whispers lullabies. Carignan thrums her fingers on the off-beat, spoons marijuana brownies into your mouth, leans into you, breathes sweet smoke into the air. Terroir: Black decomposed schist and limestone underneath. 

Ages of the vines: Over 80 years old vines

Vinification: Grapes are hand-harvested // natural fermentation. Aged for 20 months in old oak barrels // no fining // no filtration.

Winemaker: "Very little working of the cap – ‘No pigeage, no remontage, whole bunch, we crush a little when it goes into tank to avoid carbonic. Then we don’t touch anything; it’s an infusion. Then when it’s ready, we press into barrel.’ In 2018 it took about 30 days. Aged for 20 months in old oak barrels. No fining, no filtration. We want slim, elegant, but not meagre. In 2018, southern wines suffered a lot of brutality, high alcohol, very big."
