Terroir: Côte de Beaune is a tiny appellation of only 52 hectares, one of the smallest in Burgundy – a region already famous for its diverse and often very small parcels. Not to be confused with the much larger Côte de Beaune Villages (with 3,222 hectares), the terroir is characterized by its gravelly clay-limestone soil and its old vines. The Pierres Blanches parcel is just above the AUC Beaune 1ere Cru “Les Bressandes”.

Vinification: The grapes are hand harvested and pressed // Cold clarification over approximately 24 hours // The clarified must ferments in large and previously used old oak vats, to preserve its purity and minerality, and aged for 15 months on its lees.
