A 100% Pinot Noir with an explosion of red fruits– cherries, blackberries and cassis. A hint of soft spices and violets. Alive and vibrant, with soft tannins, a mineral finish and long length. Elegant and balanced, with lots of freshness.
Emmanuel Giboulot comes from a long legacy of organic viticulture, and remains one of its greatest advocates in Burgundy today. He has four decades of experience in crafting the finest quality wines from a variety of terroir. On the hillside of the Montagne de Beaune are the very old vineyards of the appellation Côtes de Beaune. This tiny appellation (not to be confused with the vast Côtes de Beaune Villages) has no Premier Cru sites, but many plots are located just opposite those designated vineyards. The Les Pierres Blanches parcel is on the upper slopes at around 300-370 metres, and just beneath the Beaune Premier Cru Les Bressandes. This is one of the oldest sites of the Côtes de Beaune appellation and is divided into two parts: the first planted in 1962 and the second in the early 2000s.
Vinification: From old vines planted at low density, growing on clay and limestone draining on gravel. Cultivated biodynamically since 1985, the grapes are picked by hand, 100% destemmed and fermented in open wooden vats. The press and free-run juice are blended and allowed to settle. Fermentation lasts a full lunar cycle. The extraction of aromas, tannins and colour is natural (no yeasts, enzymes or heat) and is done by traditional pumping over and punching down. The wine is then aged for 18 months in only old oak barrels.
Match it with: Roast pork, braised veal, rabbit, Munster or Chaource cheeses.
