Golden reflections on the eye and a nose filled with aromas of yellow plum, fennel, wild flowers and a touch of sea spray. The palate, like the nose, is complex and full of life. Refreshing acidity balanced by a long finish with flavour of spice and candied citrus.

In this blend Jean-Charles works with native Corsican varietals grown across the 18 hectares of vines punctuated by shrubs and olive trees.

Vines: Carcajolu Biancu, Paga Debbiti, Riminese, Rossola Brandica, Biancone, Vermentino

Vinification: Grapes are hand harvested and pressed, fermentation and maturation takes place in 600 litre barrels with 9 months spent on lees to enhance the texture. The wine is filtered and left to age further in bottle for 6 months before release.

Match it with: The richness and intensity of this wine makes it an ideal partner to rich fish dishes in a cream or butter sauce.
