A blend of Vermentino along with local Corsican varietals provide this wine with an intense bouquet of white peach and Mirabelle plum. This is enhanced with notes of ripe lemon zest and yellow flowers. On the palate the wine is silky in texture and packed with refreshing acidity completed by a long mineral finish.
Fueled by a passion for nature, it is Jean-Charles Abbatucci's primary aim to produce wines in harmony with nature to truly express their terroir. In this blend, he embraces 5 of the 14 varietals grown on the estate.
Vines: Vermentino, Brustiano, Bianco Gentile, Genovese, Rossola Bianca
Vinification: The vines are hand harvested pressed individually. Fermentation takes place in 600 litre barrels followed by malolactic fermentation and 9 months maturing on lees. The final blend is assembled and left to settle in stainless steel for 6 months following a further 6 months maturation in bottle prior to release.
Match it with: The complexity of this wine makes it an ideal partner to a number of dishes ranging from freshly shucked oysters with lemon to a delicate veal carpaccio with shaved Parmesan.
